Easy Peasy Chicken Salad

One of my goals for 2016 is to learn how to make one new dish each month. I'm happy to report I reached January's goal without much problem or procrastination. As it is one of the few things I know how to make, I've been enjoying this chicken salad recipe at least once a week for the past five weeks. Now the time has come to share this recipe with you. Enjoy!

Easy Peasy Chicken Salad


  • 1 Cup Shredded or Diced Chicken (I typically use leftovers)
  • ¼ Cup Mayonnaise
  • ¼ Cup Mashed Avocado
  • ¼ Cup Finely Diced Apple
  • ¼ Seedless Red Grapes, Halved or Quartered
  • ¼ Cup Chopped Celery (If you’re in to that sort of thing.)
  • Tiny Handful of Chopped Walnuts
  • Bread and/or Lettuce
  • Salt & Pepper


  1. Stir the mayonnaise and avocado together in a small bowl.
  2. Add all the other ingredients save for the bread/letuce. Stir until the mayo - avocado mixture is evenly distributed..
  3. Either spread between two slices of bread to make a sandwich, or spoon into large leafs of lettuce. 
  4. EAT.
