The Food Fix: Steak & Nectarine Salad

Guys, I have a confession to make: I love eating. I do it multiple times a day. To honor the love between a girl and her grub, I'm sharing one of my favorite recipes with you. I'm the first to admit that I'm a lousy cook, but this one is super simple. After all, it is a salad, which is one of the easiest and most customizable things to make. 

Feel free to customize the recipe to match your tastes / dietary restrictions / cooking ability. The recipe below is only for one serving and can be prepared in 20 minutes or less. (Where my single ladies at?) Let me know what you think!

Steak and Nectarine Salad

Time: 12-20 Minutes

Serves: 1 

Ingredients: 
   
Sirloin Steak - 4 oz
1 Nectarine
Large Handful of Spring Mix
1/2 Shallot
Bit o' Basil
Feta Cheese
Pecans - Totally Optional
1 Tbsp Red Wine Vinegar
2 Tsp Olive Oil
Salt N' Pepper 


  1. Season your steak with salt and pepper to taste on all sides. Set aside and wash hands.
  2. Pit the nectarine. Thinly slice the nectarine and basil, and mince the shallot.
  3. Get out a medium pan, add a small dab of olive oil and put on high heat. 
  4. Carefully transfer steak into hot pan. Watch out for oil splatter. 
  5. Sear for 1 minute per side. If your steak is really thick, quickly sear the edges until the color is roughly the same as the rest of the steak. 
  6. Turn heat down to medium and allow steak to cook for another 2-4 minutes per side depending on the thickness of the steak and desired doneness. The meat should be at least 140°F. Let rest for 5 minutes.
  7. In the same pan, crank up the heat to high and add the sliced nectarines. Let cook for 1-2 minutes or until caramelized and lightly charred. 
  8. Slice steak against the grain. Resist the urge to eat the steak on its own.
  9. Whisk the red wine vinegar, olive oil, shallot, and some salt and pepper together in a large bowl. Toss spring mix and basil in the vinaigrette. Top with steak, nectarines, feta and pecans.
  10. Eat and enjoy.
If you're not afraid of the grill like I am, you can also prepare both the steak and nectarine on that.
